There are three main factors to consider when crafting your brew…
The Deep Dive
Temp
The hotter the water, the stronger the extraction. Cooler temps help to reduce bitterness and bring out subtle flavors in more delicate teas while hotter temps typically preferred for black teas and herbal tisanes to bring out the bolder, richer flavors.
The higher your tea to water ratio is the less time your tea will need to steep to reach the desired flavor. If you plan on steeping leaves multiple times in a sitting it’s recommended to have more tea leaves and less water with shorter steep times.
Ratio
Time
The longer you steep your tea, the more flavor but also bitter tannins you’ll extract. The key is to find the right amount time to strike a balance of flavor and bitterness that makes your perfect cup.
What about cold brewing?
Cold brewing uses cold water and a significantly longer steep time. Since this is a slower, more gentle process the result is an extraction that is smoother, less bitter, and naturally sweeter.
Use room temp or cool water.
2g. or ~1 tsp. per 8oz. of water.
Refrigerate for 12-24 hours and strain
To cold brew…
“There is no single recipe for making the perfect tea, as there are no rules for producing a Titian or a Sesson. Each preparation of the leaves has its individuality , its special affinity with water and heat, its hereditary memories to recall, its own method of telling a story.”
Experiment
The real secret to brewing is that there is no right way, but the fun is in learning what makes your perfect cup. So experiment Try different techniques and find what you like.
